Idli Sambar Delight: Unlocking the Secrets of South Indian Cooking

Title: Authentic South Indian Idli Sambar Recipe

Introduction:
Learn how to make delicious and authentic South Indian Idli Sambar at home with this easy-to-follow recipe. Idli Sambar is a classic combination of steamed rice cakes (idli) served with a flavorful lentil-based vegetable stew (sambar).

**Ingredients:

For Idli:
- 2 cups idli rice
- 1 cup urad dal (black gram)
- Salt to taste

**For Sambar Powder:**
- 2 tablespoons coriander seeds
- 1 tablespoon cumin seeds
- 1 tablespoon chana dal (split chickpeas)
- 1 tablespoon urad dal (black gram)
- 1 teaspoon fenugreek seeds
- 5-6 dried red chilies

**For Sambar:**
- 1 cup toor dal (split pigeon peas)
- Vegetables of your choice (carrots, beans, drumsticks, etc.)
- 1 onion, chopped
- 2 tomatoes, chopped
- 1/2 cup tamarind extract
- 1/2 teaspoon turmeric powder
- 2 tablespoons sambar powder
- Salt to taste
- A pinch of asafoetida (hing)
- 2 tablespoons oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- Few curry leaves
- 2-3 dry red chilies
- Coriander leaves for garnish




**Instructions:**

**For Idli:**
1. Rinse and soak idli rice and urad dal separately for 4-6 hours.
2. Grind urad dal to a smooth batter and idli rice to a slightly coarse batter.
3. Mix both batters, add salt, and allow to ferment overnight.
4. Grease idli molds, pour batter, and steam for 10-15 minutes.

**For Sambar Powder:**
1. Dry roast coriander seeds, cumin seeds, chana dal, urad dal, fenugreek seeds, and dried red chilies.
2. Grind into a fine powder.

**For Sambar:**
1. Cook toor dal until mushy.
2. In a pot, sauté mustard seeds, cumin seeds, red chilies, and curry leaves in oil.
3. Add onions, tomatoes, turmeric, and salt. Cook until tomatoes are soft.
4. Add tamarind extract, toor dal, and sambar powder. Mix well.
5. Add vegetables, adjust consistency with water, and cook until tender.
6. In a separate pan, temper mustard seeds, cumin seeds, and asafoetida. Pour over sambar.
7. Garnish with coriander leaves.
